Happy Monday after Thanksgiving, aka possibly the most difficult day to be back at work. Four days off was pure bliss and has me longing to be yet again completely unaware of the realities of work and “real” life. But here I am, back at my desk, quite aware of my overflowing inbox and somewhat tighter-than-usual waistline.
I left for Richmond for work early this morning and left behind my leftover goodies for my boyfriend (and Locket…she discovered the amazingness of honey ham this past weekend). My fridge in Richmond is somewhat less enticing, currently occupied by bread in the freezer and two cans of peanut butter — one crunchy, one smooth. Yes, I’m 28, and this is my life and proud of it! (Not really, but I”m working on it.) Now I’m not at all opposed to peanut butter for dinner – in a sandwich or in a spoon – but if you’re feeling anything like me, you’re probably ready for something semi-healthy to help stave off the guilt that tends to seep in with reality.
So as I was going through my inventory of healthy recipe ideas, I thought I’d share some of my top ‘Meatless Monday’ ideas from over the years. Yes, after a long post-holiday Monday, we all need some happiness on a plate that fills and cheers us up and makes us feel like we might actually follow through with the whole ‘detox’ thing (until maybe Wednesday at least).
